Nancy's Recipe of the Month
Serve with Peachy Canyon Snow Vineyard Zinfandel - the New York Times selection as best Zinfandel.
1-nine(9) pound standing beef rib roast trimmed with just a thin layer of fat left on it
1/4 cup Dijon mustard
3 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
1 tablespoon coarse kosher salt
2 teaspoons freshly ground black pepper
Place rib roast, fat side up, in heavy roasting pan or on rimmed baking sheet. Spread mustard all over beef. Mix rosemary, thyme,salt and pepper in small bowl; sprinkle the mixture over beef and press lightly to adhere. (Can be prepared 1 day ahead. Cover and refrigerate. Let stand at room temperature for 45 minutes before roasting.)
Position the rack just below center of oven and preheat to 450°F. Roast beef uncovered 15 minutes. Reduce oven temperature to 350°F. Roast beef 1 hour 50 minutes until thermometer inserted into center of beef registers 125°F 130°F for medium-rare. Transfer beef to a platter and tent loosely with foil and let the roast rest for 20 minutes.
Nutcracker Tickets
Nancy not only shares her recipes this holiday season, but also shares her love of dance. Make plans to visit Paso Robles and see a terrific performance of a holiday tradition as the North County Dance and Performing Arts Foundation,in conjunction with Class Act Dance, perform The Nutcracker Ballet. In its eleventh year - it's become a holiday tradition for visitors and residents.
