This was one of our first wines that we approached as 4 different lots. We first hand picked, destemmed and fermented. After primary fermentation we bled the free run juice off of each lot and then basket pressed the fruit keeping the wines separate from each lot. Each lot possessed different color aromas & mouth feel. We then blended the wines to create a wine that was sophisticated in its youth yet possessed enough tannin for ageability. |
