2007 Mustard Creek Zinfandel

If black inky purple zin is what you seek, this is the wine for you. Aromas are made up of toasty vanilla, chocolate and array of berry fruits. The mouth feel is bursting with ripe raspberries, cherries and blueberries. With the addition of the Petite Sirah the wine has everlasting longevity.

Vinification: This is a blend of Peachy Canyons new estate vineyard. All of the fruit was hand picked, pre sorted , cold soaked and tank fermented for 12 days. The wine was gently pumped over 3 times a day for a short amount of time to get the most extraction of color and flavor. The wine was then aged in 25% New Oak a select American Oak cooperage.
