As Westside Zinfandel lots are sorted and pumped into fermenters, saignée juice is collected. In addition, some lots are picked early to preserve crisp acidity. The resulting juices are cold settled before being racked to concrete and stainless steel tanks for fermentation. These tanks are kept cool throughout fermentation and take several weeks to finish. Upon dryness, fermentation is stopped, and the wine is blended and prepared for bottling.
