Cluster sorted prior to destemming, whole berry destemmed and berry sorted post destemming fermented French Oak barrels with heads removed, 3-5 cold soak, 14-21 day maceration time, punched down 1-3 x daily, pressed at dryness in small basket press, ML fermentation completed in barrel, aged for 16 months in 30% New French Oak
