Willow Creek AVA traditionally provides some of the latest ripening fruit in our cellar. In 2017 we sourced Zinfandel from two vineyards in the Willow Creek District to produce Willow and in 2017 they were both picked on the same day at the tail end of September. After carefully separating berries from stems, this wine was allowed to soak for several days before inoculated with yeast. Fermented in bins with 3 gentle hand punch downs per day, this fermentation took extra time as the weather, and the cellar became cooler in the fall. After 26 days on skins, this wine was pressed and aged for 18 months in French Oak puncheons, about 30% new wood.
